If you are trying to sneak some veggies into your diet, or just trying to lay off the carbs for a while this simple stir-fry is a quick and easy meal.
Start by heating a tbsp of oil in a large skillet (I like to use a wok). While the oil is heating slice an onion, one red pepper, and one green pepper.
As soon as the pan is hot add the sliced vegetables, stirring until tender. As you stir, slice some mushrooms and about 2 cups of broccoli. Add it to the pan.
When the vegetables look as if they are almost done, splash in some soy sauce and some red pepper flakes (I’m a big fan of spicy, and it revs your metabolism! I love some extra fat burn!)
And bam in 20 minutes or less you have the perfect light dinner:)
